Smoked Chicken Thighs Wrapped in Bacon with Mushroom Stuffing

Everyone likes meaty thighs!

Chicken thighs turn out great in the smoker, and of course they taste amazing! Unlike chicken breasts, they don’t dry out nearly as quickly. This recipe calls for boneless, skinless chicken thighs –  great for a hassle-free eating!

The mushroom and parsley stuffing works wonders in this recipe. It’s mild and really absorbs the smokey chicken and bacon flavor. These chicken thighs are wrapped in bacon because, well, because everything tastes like heaven if it’s wrapped in bacon!

Ingredients

  • 8 boneless, skinless, chicken thighs
  • 4 slices of thick bacon or 8 slices of thin bacon
  • 2 tbsp butter
  • 8 oz mushrooms, finely chopped
  • 1 onion, minced
  • 2 garlic cloves, minced
  • ½ cup chopped parsley
  • salt and pepper to taste
