Who loves breakfast?  I do! This kind of breakfast will surely drag you out of bed and make your mornings extra special!

This fatty is a new variation for you to try. It’s a breakfast sausage rolled with pepper Jack, jalapeno and spinach, then wrapped in a woven exterior of bacon. Yum! This delicious mix of ingredients is smoked at a low temperature, but you could also try it in a low-heated oven. You can then serve the fatty with eggs or put a slice on top of your burger.


  • 13 strips thinly sliced bacon
  • 1 pound plain or hot ground breakfast sausage
  • 1/2 cup shredded pepper Jack cheese
  • 1 jalapeno pepper, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 8 to 10 baby spinach leaves
